Mix Veg Vadi

Punjabi Mix Veg Vadi is a Punjabi vegetable preparation with vadis ( fried dal balls) simmered in a delicious onion-tomato based gravy.

Ingredients
Urad Dal Vadi 1 Piece
Brinjal ( Baingan ) 1
Carrot 1
Potato 1
Capsicum 1
Tomato , pureed 3 to 4
Grated Onion 1 Big
Lal Mirch Powder 1 tbsp
Haldi Powder 1/2 tbsp
Adrak Lehsun & Green Chilli Paste 2 tbsp
Garam masala 1 tbsp
Salt To Taste
Oil For Frying
Fresh Dhania leaves chopped 2 tbsp

 

Method:

  1.  Cut all the vegetables in cubes.
  2. Heat oil in a pressure cooker, slightly fry the vadis keep aside. Roast onions till golden brown, add Lal Mirch powder and one teaspoon water.
  3. Add Adrak Lehsun and chilli paste fry for a while, add tomato puree and all the dry masalas, vegetables and vadi roast on a low flame for 5 minutes, add one tablespoon of water finally add garam masala cover the lid and cook till 2 whistles.
  4. Serve hot with roti or rice.
