Sweet Rabri is a sweet, condensed milk based dish made by boiling the milk on low heat for a long time until it becomes dense and changes its color to pinkish. Sugar, spices and nuts are added to it to give it flavor. It is chilled and served as dessert.
|Milk ||10 Cups|
|Sugar ||4 tbsp Or as needed|
|Green Elaichi ( cardamom )||4|
|Kewra Essence||4 Drops|
|Green Elaichi Powder ||A Pinch|
|Pistachio Powder||A Pinch|
- Bring the milk to boil in a deep heavy pan.
- Add the sugar and cardamom seeds and leave to simmer over a low heat for 2 hours until the milk is reduced to one quarter.
- Remove from the heat and add the kewra esscence.
- Sprinkle with the cardamom and pistachio powders and serve hot or cold with faluda.
